These Vegan Quinoa Pancakes are really simple to make and super delicious. Doesn’t matter if you’re vegan or not! Just give it a try and I promise, you will love them. Made vegan, dairy free, and refined sugar free. Since the quinoa is a seed (not a grain) the recipe is gluten free as well.
It was my first time using quinoa flour to make pancakes and I was honestly surprised by how fluffy they turned out to be! I feel like they’re lighter and fluffier than any pancakes I’ve made. What’s more, you don’t need any eggs or bananas to make them!
If you never tried quinoa flour, this recipe is perfect to start with! Quinoa flour is amazing in baking, as it works perfectly by itself and you get all the nutrients you normally would get using the whole seed. It’s high in fiber, protein and all the essential amino acids.
Tips how to make these Vegan Quinoa Pancakes the perfect pancakes:
- Start with preparing vegan “buttermilk” by mixing plant based milk with apple cider vinegar.
- Mix the batter just until the dry and wet ingredients are combined. Don’t over mix it!
- Let the batter rest for 5-10 minutes.
- Make sure, that the pan is very hot for pancakes to come out right.
- Flip once the center begins to bubble and edges are dry.
