Vegan Mango Cake Spiced with Turmeric

Have you tried the combination of banana, mango and turmeric yet? If not, you need to try the recipe! I came up with this Vegan Mango Cake Spiced with TurmericΒ adding mango to my cake for the first time ever. It came out to be amazing as it gives it a rich, tropical and sweet taste. It is subtly spiced withΒ turmeric that I have been using a lot lately. Turmeric treats skin conditions and it is great source of antioxidants. There is way more benefits of using turmericΒ but these are a few of my personal favorites. I topped the mini cake with yogurt sweetened with maple syrup and some extra fresh mango. I replaced regular eggs with flax eggs, making this recipe vegan. Check out more of my vegan recipes here.

Vegan Mango Cake Spiced with Turmeric

Ingredients

  • 1/4 cup oatmeal flour
  • 1/4 cup buckwheat flour
  • 2 flax eggs(2 tablespoons grounded flax seeds + 5 tbsp water)
  • 1/3 cup mashed banana (1 medium)
  • 3 tablespoons melted coconut oil
  • 1 teaspoon soda + 0.5 tsp apple cider vinegar
  • 1/2 tsp turmeric spice
  • 2 tbsp almond milk
  • 1/3 cup cubed mango + 2 tbsp oatmeal flour
  • Filling:
  • 1/3 cup dairy free yogurt or a greek yogurt for non vegan option
  • 2 teaspoons maple syrup
  • 1/4 cup cubed mango

Instructions

  1. Mix mashed banana, flax eggs, melted coconut oil and almond milk.
  2. Add dry ingredients; oatmeal and buckwheat flour, soda + apple cider vinegar, turmeric.
  3. Toss mango with 2 tbsp oatmeal flours, and fold in the batter.
  4. Prepare pans. I used three 4.75in (12cm) pans, however a smaller round or loaf pan will work as well.
  5. Bake in 360F/ C until toothpick comes out clean (around 20-30 min).
  6. Let it cool on a rack.
  7. Prepare the filling. Whisk yogurt with maple syrup, adding cubed mango.
  8. Layer the cake and refrigerate.
