Vegan Blueberry Coconut Tarts

These dreamyΒ Vegan Blueberry Coconut TartsΒ are vegan, gluten free and extremely delicious.Β They are made with a crunchy almond & oatmeal crust, filled with perfectly sweet, creamy coconut cream, and blueberries that melt in your mouth. You need just a few simple ingredients to make these little colorful tarts. It is literally one of my favorite and easiest sweet treats I have made. You can enjoy these pretty tarts any time, as they are guilt-free and I can assure they will satisfy your sweet tooth cravings. You are going to love it!

Vegan Blueberry Coconut Tarts


1 1/4 cup almond flour
3/4 cup oatmeal flour
4 tbsp melted coconut oil
1 tbsp maple syrup

1 1/4 cup blueberries (I used frozen)
1 can coconut milk (thick part, refrigerated)
2 tbsp maple syrup


  1. Mix flours, coconut oil and maple syrup.
  2. Press the crust into the bottom and sides of prepared pans and bake at 350F for around 13-15 min. (I used three 4.75in (12cm) pans, but you can use one bigger tart pan).
  3. For the filling, sautee blueberries with maple syrup for around 10 min.
  4. Add coconut cream stirring until smooth and creamy.
  5. Pour the mixture into the cooled tart shells.
  6. Refrigerate.vegan raw tart
