What could be better than making a banana bread when you have some overripe bananas to use up? Absolutely nothing! This Vegan Apple Banana Bread is wholesome, very moist and naturally sweetened. I also added some walnuts to the loaf and on top for an extra crunch! It is perfect if you are vegan or simply out of eggs (like I was)! The Walnut Spread that I came up with once the banana bread was in the oven, is made with chickpeas, walnuts and dates. It turned out to be heavenly good! I spread it over my loaf and still had some leftovers for my morning pancakes or snack.

Vegan Apple Banana Bread with Walnut Spread
INGREDIENTS:
1 cup rye flour
1/2 cup oatmeal flour
2 mashed very ripe bananas
1/2 cup shredded apple
3.5 tablespoon melted coconut oil (you can substitute with ghee butter for a non vegan option)
2 flax eggs
1/4 cup + 1 tablespoon water
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 teaspoon soda + 1 teaspoon lemon juice
WALNUT SPREAD:
1 cup cooked chickpeas
1/2 cup walnuts
1/2 cup soaked dates
1/4 teaspoon himalyan salt
METHOD:
- Mix mashed banana, melted oil and flax eggs.
- Combine flours, nutmeg, cinnamon, soda and lemon juice.
- Mix it all together, adding shredded apple and water. Pour batter into prepared pan.
- Bake in 360 F/ 180 C for around one hour or until a toothpick inserted in the center comes out clean.
- Toast walnuts until fragrant, to enhance the sweet and nutty flavor ( you can do it in the over or on the stove)
- Put the walnuts in the bowl of a food processor, and grind until they become sticky.
- Add chickpeas, soaked dates (I added them with a little bit of water for a better consistency) and salt.
- Once you bread is ready and cool, top it with the walnut spread and some walnuts if you want!
