Turmeric Spiced Mushroom Rice

Brown rice, mushrooms, onions, cinnamon and turmeric… so many amazing flavors! How can you say no to this combo? It’s time to upgrade a plain rice side dish! This mushroom rice is a perfect side, and could be a filling main dish as well. Just top it off with a fried egg! Brown rice is a highly nutritious food. It is a whole grain high in fiber that digests slower than most of processed grains. It makes you feel fuller for longer! On top of that brown rice is gluten-free and a really good source of magnesium.

This turmeric spiced mushroom rice wasn’t meant to be put on my blog, however after tasting it, I had to remake and share the recipe with you! Bursting with an earthy mushroom flavor, spiced with a perfect amount of nutritious turmeric, cinnamon and cumin. This is how delicious it tastes. I recommend to saute mushrooms in a little ghee butter, as you want to get this wonderful, intense flavor! Another tip I’d suggest you, is to add in between a half to one tablespoon of ghee butter when you stir the rice. The difference in taste will be amazing! My favorite is to serve the rice with crispy ghee fried egg. Yum!

Turmeric Spiced Mushroom Rice

Ingredients

  • 1/2 cup diced onion
  • 1 1/2 cup sliced mushroom
  • 1 tbsp ghee butter
  • 1 cup dry brown rice
  • 2 1/2 cups of water
  • 2 cinnamon sticks
  • 1/4 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp minced garlic
  • salt
  • half/1 tbsp ghee butter (optional)

Instructions

    For the rice cooker:
  1. In a medium pan melt ghee butter.
  2. Add onion and little salt. Sautee until soft and golden brown. Transfer to a bowl.
  3. Place mushroom on the same pan and cook until soft.
  4. Transfer, onion and mushroom to a rice cooker. Add dry brown rice, water, all the spices, cinnamon sticks, salt. Stir together.
  5. Select the correct cooking option according to your rice cooker. Cook the rice.
  6. Fluff the rice, add in half/1 tbsp ghee butter (optional).
  7. Serve with for example fried egg.
  8. Stove top:
  9. In a medium sauce pan melt ghee butter.
  10. Add onion and little salt. Sautee until soft and golden brown. Transfer to a bowl.
  11. Place mushroom on the same pan and cook until soft.
  12. Add the rice and cook, stirring constantly.
  13. Stir in the water. Bring to a boil, cover saucepan and reduce heat to low.
  14. Cook until all of the liquid is absorbed, about 40-50 minutes.
  15. Add in half/1 tbsp ghee butter (optional).
  16. Serve with for example fried egg.
