Figs are one of my favorite seasonal fruits. Maybe because they’re so unique and available for such a short time during the year. Fresh figs are perfectly sweet, and the combination of crunchy seeds and soft flesh is my favorite. Their sweet flavor pairs perfectly with different types of food like for example zesty arugula and cheese. With that being said, today I’m bringing you a sourdough fig toast with non dairy cream cheese.
While I love pairing figs with brie or goat cheese, this non dairy cream cheese is a great alternative for those who are vegan or try to avoid dairy products!
HOW TO MAKE BEST NON DAIRY CREAM CHEESE RECIPE
This non dairy cream cheese recipe requires basic ingredients and only a few easy steps! First and the most important – blanch the almonds.
HOW TO BLANCH ALMONDS THE EASY WAY
Before I discovered this amazing idea I would soak almonds overnight and peel them in the morning. It’s a great way but too time consuming if you’re in hurry. I followed the steps I found at The Loopy Whisk and it made the whole process so much faster!
Boil a pot of water. Once the water is boiling add almonds and boil for exactly 1 minute.
Then, drain the almonds and rinse with cold water.
Squeeze each almond to remove the skin. and that’s it!!
Once you have your almonds blanched, toss them in a food processor or high speed blender along with extra virgin olive oil or avocado oil, lemon juice, water, nutritional yeast and salt. Process until smooth and creamy. Adjust to your taste.
This almond cream cheese is not as creamy as for example cashew cream cheese would be, but I think the texture is just perfect to spread on toasts and crackers. For the bread, choose your favorite kind. I usually go for a sprouted whole wheat, but honestly there’s nothing better like a goos sourdough from the local farmers market!
