Can you think of anything better than waking to up to some homemade waffles? These Oatmeal Pumpkin Waffles are made with oatmeal flour, fresh pumpkin puree and warm spices. Perfectly crispy on the outside and fluffy on the inside! They make a great Fall inspired breakfast, brunch or even dessert!
The recipe is really simple and requires just one flour – oatmeal flour. I’ve already mentioned a multiple times that oat flour is my go to baking flour. To make it, place oatmeal in a blender or food processor and pulse until fine flour forms. You can also purchase oatmeal flour here!
The pumpkin puree and warm spices give waffles a beautiful color and make your home smell like Fall. There’s nothing smelling more delicious than fresh pumpkin spice!
Waffles are super versatile and can be topped with pretty much anything you want at the moment. I recommend you to try dollops of ice cream (I used dairy-free) and maple syrup. What a heavenly combo! If you get to have any extras just pop them in the freezer for busy weekday mornings. Then just pop them in the toaster to warm up! 1 1/4 cup oatmeal flour 1/2 cup pumpkin puree 1 large egg 2 tbsp coconut sugar 1/2 cup plant based milk or water 1/4 cup coconut oil, melted 2 1/4 tsp pumpkin spice (or mix of 1 1/2 tsp cinnamon 1/4 tsp ginger 1/4 tsp nutmeg 1/8 tsp cloves) 3/4 tsp baking soda 1 tsp apple cider vinegar pinch of pink himalayan salt In a mixing bowl, whisk together pumpkin puree, egg, sugar, milk, oil and apple cider vinegar. Add in oatmeal flour, spices, soda and pinch of salt. Mix just to combine, be careful not to overmix. Preheat waffle maker and lightly grease with coconut oil. Pour around 1/3 cup of batter to the center of each waffle iron. Cook according to waffle maker directions (my Belgian waffle iron takes a little longer than a regular iron). Top each waffle with dollop of ice cream (optional) and maple syrup. Serve immediately.Ingredients
