Fluffy Oatmeal Buckwheat Banana Pancakes (gluten free)

As I usually wake up pretty hungry, I try not to spend too much time on preparing my breakfast. I always choose something nutritious that will fill me up for the next couple of hours. These Fluffy Oatmeal Buckwheat Banana Pancakes are free of refined sugar,Β sweetened only with banana and topped with a homemade cashew butter and fresh blueberries. Slightly sweet oatmeal flour and nutty buckwheat are the perfect combination that makes the pancakes super flavorful, unique and delicious. The recipe is extremely easy, made with simple ingredients andΒ can be put together in minutes! There’s no need to wait for the weekend to enjoy some delicious pancakes!

Fluffy Oatmeal Buckwheat Banana Pancakes (gluten free)

Ingredients

  • 1/2 cup blended oatmeal
  • 1/2 cup buckwheat flour
  • 1 very ripe banana
  • 1 egg
  • 1/2 cup plant milk or water
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon

Instructions

  1. Whisk the mashed banana, eggs and all of ingredients.
  2. Let the batter rest for around 5-10 minutes.
  3. Warm a little ghee butter or coconut oil in the pan to prevent sticking, if you'd like.
  4. Spoon the pancakes onto the pan and cook until some bubbles appear on the top.
  5. Flip the pancakes and cook a few minutes more.

I served mine with blueberries, homemade cashew butter and obviously coffee on the side!
