The fall has come and there seems to be nothing more comforting than a bowl of warm, hearty soup. Preparing a soup doesn’t necessarily mean putting too much time and effort. During busy weeknights I love to go for canned soups! My absolute favorite are Amy’s Soups. Today, I’m bringing you the Amy’s Thai Coconut Soup served with rice noodles.

The Coconut Thai Soup is the combination of sweet coconut milk, house-made organic tofu, shiitake mushrooms, sweet potatoes, green beans, kaffir lime leaf, mild spice, and lemongrass. Perfectly warm and lightly spicy. Made gluten-free, dairy-free and vegan. If you’re looking for a Thai restaurant-worthy soup, this is what you should get! The flavors and smoothness of Amy’s soups make a divine dish, while at the same time giving you the home cooked feel ready in just minutes.
One of my favorite things about canned soups is that you can “makeover” it however you’d like. I love adding garnishes to boost the flavors. Garnishing is a great way to make soups taste more delicious as well as make it more filling. I paired this Thai Coconut soup with rice noodles, a squeeze of lime and topped off with cilantro to bring out the Asian-inspired flavor.

Instructions
Cook rice noodles according to the package. Set aside.
In a small sauce pan, warm up the soup.
Arrange noodles in a bowl, pour in the soup and garnish with cilantro and fresh lime.
